I am a big fan of simple recipes. Like Kale Chips or chocolate and coconut energy bars. Life is so busy that I don’t always have a lot of time to spend in the kitchen. Make no mistake, eating healthy, wholesome foods is a top priority, but it doesn’t have to be complicated to be delicious and filling.
Simple Berry Crisp
My favorite recipes are the ones I can make in one pot and throw in the oven to do their job. This healthy berry crisp checks both of those boxes.
I don’t do anything with the berries at all. I measure 4 cups (more or less) and toss them in a baking dish, then make the crispy filling.
Sometimes I use fresh berries and sometimes I use frozen ones. The type varies depending on the season or what I have on hand in the freezer. I like to do a few different types mixed together. No matter which combination I find myself with, it’s always delicious. I have noticed that if I use frozen berries, the crisp should cook a little longer.
I have now used the last of our frozen berries from last summer, but luckily berry season is not too far away and the strawberry plants should produce well this year!
Crumbly almond flour filling
I use almond flour to make this crispy filling. It has a nice nutty flavor that goes well with almost anything. I use my fingers to mash in butter or coconut oil, add a little vanilla, and sometimes drops of honey or stevia, sprinkle it on the berries and throw it in. oven for baking.
This berry crunch is delicious on its own, but I really like something fresh and creamy with it. I usually make whipped cream or serve it on top ice cream and we have it for dessert. However, this is such a healthy recipe that it also works great on yogurt for breakfast!
Here’s a fun summer idea – if you have a cast iron skillet and don’t want to heat the house using the oven, try prepping crispy berries on the grill!
Crispy Berry Recipe
A simple berry crunch that takes advantage of the natural sweetness of the fruit. It is grain-free, gluten-free, optional dairy-free, and optional sweetener. Bonus: it can easily be made in a single pot in the oven.
- 1 Cup heavy cream (whipped)
- vanilla ice cream
Preheat the oven to 375 ° F.
Lightly grease an 8 × 8 or larger baking dish.
Place the berries in the prepared baking dish.
In a small bowl, combine the almond flour, coconut oil or butter, vanilla and sweetener if using.
Use your hands or a fork to mix the ingredients until the filling is crumbly. You may need to adjust the almond flour slightly up or down, depending on the texture of the brand you are using.
Sprinkle the filling evenly over the berries.
Place the baking dish in the oven and bake for about 20 minutes if using fresh fruit or 30-40 minutes if using frozen fruit.
Remove from oven when cooked and drizzle with organic honey or maple syrup if desired.
Let cool partially, then top with whipped cream or ice cream to serve.
