A few weeks ago, I published a gochujang recipe; a paste of Korean red pepper. This week I’m sharing a gochujang mayonnaise recipe, which uses this paste.
What is Gochujang Mayo and why would I want to do it?
Gochujang mayonnaise is a very easy to prepare condiment full of flavor. Regular mayonnaise is a classic that has been around for hundreds of years. It has been used in several billion different ways over the years. One of my favorite uses is to spice it up with other flavors.
I did Harissa, Sriracha, and chipotle mayo for a variety of different dishes. This gochujang mayonnaise is delicious and could be my new favorite. Like the gochujang paste it is made from, it is a bit sweet and has a nice little heat stroke.
If I already have gochujang in the refrigerator, I can make gochujang mayonnaise in less than 5 minutes. I just whisk some regular mayonnaise with a few tablespoons of gochujang and a drizzle of lime juice.
Ways to use Gochujang Mayo
The gochujang mayonnaise is not my own invention. I’ve seen it used as a burger topping, dipping sauce, sushi ingredient, and dressing. Here are some of my recommendations:

Gochujang mayonnaise recipe
Whisk together the regular mayonnaise, gochujang and lime juice for a slightly sweet and spicy mayonnaise.

In a small bowl, whisk together all the ingredients.

Remarks
If your family is a bit wary of the heat, start with less gochujang and taste before adding more.
